  • 1 tortilla wrap
  • ½ red pepper
  • 40g cooking chorizo sausage
  • 2 eggs
  • 1 handful of baby spinach
  • 20g cheddar cheese
  • 1 tsp. of paprika


1.Preheat the oven to 200°C. 

2.Chop the chorizo sausage into ~1cm thick slices. 

3.Crack the eggs into a cup and whisk well. Pour the eggs into a pan on a medium heat and stir until scrambled. 

4.Place the scrambled eggs in a mixing bowl and add the chorizo, chopped peppers, cheese, paprika and spinach and mix thoroughly.

5.Place the mixture evenly in the wraps. Roll them up tight and place in the oven for ~3 minutes.
